Malt, Hops & Water

It all starts with the finest ingredients. On our tour, you’ll learn about the essential components that make our beer exceptional: carefully selected malt, hops, and the water from the region. Our brewers ensure that only the best elements go into every batch.

The Heart of Brewing

We source our malt from carefully selected malt houses with whom we have built long-standing, trusted partnerships. These collaborations ensure ideal malt characteristics and consistent quality – forming the foundation for the unique character of our beer.

From Grain to Malt – The Foundation of Our Beer

The journey of our beer begins in the malting plant, where the foundation for its future flavor and color is carefully crafted. Here, we select the ideal grain varieties, clean them thoroughly, and soak them in water to initiate germination.
As the grain begins to sprout, the previously inaccessible starch inside the kernels becomes available while natural enzymes, which we need for brewing, are formed parallelly.
This germinated grain, known as green malt, is then dried in a process called kilning. Depending on the temperature used during kilning, we produce either lighter or darker malts, each contributing unique characteristics to the beer.
Once kilned, the malt is stored in silos until it's time for the next step. At this stage, we’re just getting started with brewing: the malted grain is sent to the mill, where it's crushed and ground—preparing it for its transformation into beer.

Mashing – Where Malt Meets Water

In the brewhouse, the crushed malt meets hot brewing water – and just like that, we have mash! This mash is gently heated in a dedicated mash tun through a series of carefully controlled temperature steps.
During this process, the natural enzymes present in the malt get to work: they break down the grain’s insoluble starches into soluble malt sugars. As a result, all the essential brewing substances from the malt are released into the liquid, creating the perfect foundation for fermentation.

Lautering – Separating the Grain from the Goodness

Next comes lautering: in a special vessel called the lauter tun, we separate the solid parts of the mash from the liquid. The husks of the malted grains settle on a fine sieve, forming a natural filter bed.
What flows through is the clear, sugar-rich liquid known as wort – still full of brewing potential and ready for the next stage of its transformation into beer. What remains is the spent grain, which sustainably is further on used as animal feed.

Hops – The Green Gold of Beer

The distinctive aroma of our beer comes from one special ingredient: hops. Often called "green gold," hops are responsible for the beer’s refreshing bitterness and the stable, creamy head on top.
But they do more than just shape the flavor – hops naturally preserve the beer and even lend it a subtle, relaxing effect. A true all-rounder, essential to the soul of every brew.

From Kettle to Beer

Next, the wort is boiled and hops are added for flavor and aroma. This step is where the beer starts to take shape, and the distinct character of our brews begins to emerge. Fermentation:

The Transformation to Beer

After boiling, the wort is cooled and yeast is added to kick off fermentation. This is the stage where the sugars in the wort are converted into alcohol and carbon dioxide, and the beer starts to develop its unique flavors. Witness the transformation and learn how fermentation is key to creating high-quality beer. The original historical brewing kettles can be seen at the Brewery Museum in Dortmund – a place where history and a deep love for beer come together.

Patience for Perfection

Good things take time. After fermentation, the beer is left to mature and refine its flavors. This aging process is crucial for achieving the smooth and crisp taste that our beer is known for. Join us as we explain how patience and attention to detail make all the difference.

Packaging:

From Tank to Glass

Once the beer has matured, it’s time for the final step: packaging. Watch as our beer is carefully transferred into bottles, cans and kegs, ensuring that every drop is fresh and ready to be enjoyed. We take every precaution to maintain the highest standards of quality and meticulously monitor every process right up to the moment it leaves our brewery.

The Reward

The final step is simply enjoying the finished DAB beer. After all the work that goes into brewing – from mashing and boiling to fermenting and maturing – the reward is in the glass. This is where the balanced mix of malt, hops, yeast, and water comes together. With its aroma, color, and taste, the beer shows what it’s all about: sharing, savoring, and enjoying a DAB.
